Orange Strawberry Banana Smoothie Pops
1 cup orange juice
6 oz. strawberry/banana yogurt
1 cup fresh strawberries
1 banana
Fresh or frozen berries (optional)
Blend first 4 ingredients until smooth. Pour into popsicle molds. Stop halfway if desired and add a few pieces of fresh or frozen berries. Continue to fill molds leaving 1/4" space at the top. Freeze for 90 minutes. Remove from freezer, drop in wooden sticks and continue freezing until solid. Run mold under hot water to loosen. Wrap each popsicle in wax paper and store in a large freezer ziplock bag.
Easy Baked Eggs
Non-Stick Butter Flavored Cooking Spray
6 Large Eggs
1 Green onion, chopped
6 Tsp Shredded Sharp Cheddar Cheese
Sea Salt
Cracked Black Pepper
Preheat oven to 350 degrees. Spray a muffin tin with non-stick spray. Crack an egg into each muffin cup. Sprinkle with chopped green onion, salt, pepper, and shredded cheddar cheese. Bake for 10 minutes (slightly runny) or longer for firmer eggs. Serve with whole grain toast and fruit.
My kids will actually eat this!
This Asian Coleslaw is quick because it's made using pre-packaged shredded cabbage. It makes an easy side dish that complements any BBQ meat, burgers, or poultry.
Salad:
1 - 16 oz. bag of shredded red and green cabbage
1 small bunch of green onions, cut into small pieces
1/2 cup crispy chow mein noodles
Dressing:
2 Tbsp. Olive Oil
2 Tbsp. Soy Sauce
2 Tbsp. Lemon Juice
1 Tbsp. White Vinegar
1 Tbsp. Brown Sugar (or natural sweetener)
1 Tsp Sesame Oil
1 Tsp Toasted Sesame Seeds
Salt & Pepper
*Optional Dressing:
Make it even quicker by tossing with 1/2 cup Light Toasted Asian Sesame Dressing from Kraft.
Toss the cabbage and green together by hand. Let sit and reach room temperature.
Mix dressing ingredients and pour over salad right before serving. Toss salad with dressing, and top with chow mein noodes.
Here's an easy quiche that can be made with leftover ingredients...
1 unbaked pie shell (preferably whole grain)
2 Tbsp Olive Oil
2 Cups finely chopped broccoli
1 clove garlic
1 cup shredded reduced fat sharp cheddar cheese
2 Tbsp Real Bacon Bits
3 eggs + 2 egg whites
1 1/4 cups of skim milk
1 tsp salt
Pepper
Preheat oven to 350 degrees.
Saute onion, broccoli and garlic until tender. Spoon into pie shell. Top broccoli mixture with cheese and bacon bits.
Meanwhile, whip together eggs, egg whites, milk, salt, and pepper. Pour egg mixture into pie shell and bake in preheated oven for approximately 30 minutes.
Serve with fresh Caesar salad and bread sticks.
Whole Grain Veggie and Feta Pasta
I threw together a bunch of stuff to come up with this flavorful and colorful healthy meal.
1/2 box of whole-grain pasta, cooked
2 Tbsp olive oil
3 garlic cloves, crushed
1/4 onion, chopped
2 cups cut mixed veggies (red pepper, zucchini, squash)
Juice from 1/2 of one lemon
1/3 cup feta cheese
Sea salt & Pepper
Hot red pepper flakes (optional)
Saute garlic and onion in olive oil until fragrant. Add mixed veggies and stir-fry until tender crisp. Toss in cooked whole grain pasta, lemon juice, feta cheese and salt & pepper. Heat through until hot and serve with crusty garlic bread.
