Fresh Watermelon Salad

1/2 watermelon, scooped into balls (save the shell)
1 cup fresh blueberries
2 stalks celery, chopped fine
2 green onions, chopped fine
10 sweet basil OR mint leaves chopped fine
4 Tbsp light raspberry walnut dressing

Mix all ingredients and place back in cleaned watermelon shell. Cover with plastic wrap and chill for one hour before serving.

 
 
Summer Berry Surprise

My daughter made this beautiful dessert/snack the other day with a few simple ingredients and a bit of imagination...

6 oz of light blueberry yogurt
6 vanilla wafer cookies
4 large strawberries
Dollop of light Cool Whip (optional)

Layer ingredients in a small dessert bowl.  Voila!

 
 
Easy Chicken Salad

2 cups white chicken breast, chopped
1 celery stock, chopped
1 tsp lemon juice
2 tbsp reduced fat Olive Oil Mayo
Sea Salt & Cracked Pepper
1/4 tsp curry powder (optional)

Mix all ingredients and serve wrapped in lettuce leaves or on whole grain bread or toast.


 
 
Roasted whole chicken served with a side salad and steamed green beans is one of those healthy weeknights meals that can easily be prepared by your teenager and waiting for you when you get home.  All they need is 3 ingredients!

Roasted Whole Chicken
1 whole roasting chicken, cleaned
McCormick's Season-All
Non-stick olive oil spray

Preheat oven to 350 degrees.  Wash bird all over removing any loose skin and removing any parts packed inside the bird.  Sprinkle generously all over with season-all.  Place bird in roasting pan sprayed with non-stick spray.  Bake in oven for approximately 1 1/2 hours or until thermometer reads 180 degrees.   Remove from oven and let stand.  Serve with a tossed salad and fresh steamed green beans.
